Cauliflower is categorized as a cruciferous vegetable, a big leafy relative of the cabbage family, which means it is loaded with B vitamins that help with energy production and brain function as well as fiber which aids in proper digestion. The vegetable also contains a handful of antioxidants, calcium, and potassium that help fuel a healthy heart, body, and mind.

What does it taste like?

I think I’m the only one in my family who loves raw cauliflower. But I think its absolutely delicious crunchy and fresh, sliced in a salad!

Steamed? It’s nice and soft holding a little bit of its firmness.

And baked?

Well, oven-baked cauliflower is the reason I made these buffalo cauliflower bites in the first place!

It is the absolute BEST.

This buffalo baked cauliflower bites has the crispiness of something fried without all the added extra calories. A healthy alternative to your classic “chicken wings” this appetizer can even be easily made into a vegan dish simply by choosing a dairy-free dipping sauce to accommodate it.

Why i love it

I love this baked cauliflower dish because it’s spicy (PSA: not all kids will enjoy this) and I live in Thailand. Authentic Thai food tends to be on the hotter side, so whenever I can imitate that at home in the kitchen, I am all for it.

How to serve: tips for making and serving cauliflower buffalo bites

I recommend serving this oven-baked cauliflower with my family’s absolute favorite: my cashew ranch dipping sauce (recipe below). You can also garnish the finished vegan dish with chopped green onions and serve with a side of celery if you want to add a little crunch to your cooling component.

Which sauce to choose?

Even though the buffalo sauce is baked into this vegan cauliflower, the dish requires an extra dipping dressing to help your taste buds seal the deal. You are more than welcome to use both dairy and non-dairy options for that complimentary dip!

Cashew ranch dipping sauce recipe:

Ingredients:

  • 1 cup raw cashews soaked overnight
  • 1/2 cup of water
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp garlic powder
  • 2 tbsp fresh dill

Instructions

  1. Add everything, except the dill, into a blender.
  2. Cut the dill and add to your blended sauce.

A classic dip that is VEGAN with a delectable, nutty base? This sauce is a tasty way to compliment the spicy cauliflower, making it a winner in my book.

Ranch dipping sauce:

For those who enjoy dairy, a regular ranch is also a good option. Store bought or make your own.

Bleu cheese dressing:

For those who like a robust flavor in addition to their dairy, bleu cheese is always your best bet.

    Ingredients

    Adjust Servings:
    1/2 cup Gluten-free all Purpose Flour
    1/2 cup Water
    1 middle head Cauliflower
    1 tbsp Paprika
    1 clove Garlic
    1/2 tsp Salt
    1 tsp Ginger
    1 tbsp Extra Virgin Olive Oil
    1/2 cup Red Hot Sauce

    Pre-heat the oven to 425°F.

    How to make. Steps

    Make Batter

    Press your garlic clove with a mincer. Combine with flour, water, paprika, ginger, and salt until a batter forms.

    Chop Cauliflower

    Chop cauliflower in bite-sized florets. They should be bite sized and about half the size of traditional chicken wings.

    Dip the cauliflower pieces into the batter

    Line a baking sheet with parchment paper. Dip the cauliflower pieces into the batter, making sure each piece is evenly coated. Put bites on a baking sheet not very close to each other.

    Bake Cauliflower

    Bake cauliflower in the oven for 10 minutes. Flip over and cook for another 10 minutes, or until golden brown.

    Brush the hot sauce on each cauliflower “wing.”

    In a small bowl, whisk together the hot sauce and olive oil. Brush the hot sauce on each cauliflower “wing.” Put them back in the oven for 20 minutes.
