This pineapple cheese casserole is one of our favorite holidays go-to. My two boys just adore the flavors and enjoy helping me throw it together for family dinners or to feed a crowd. We’ve made this easy casserole as one of the Easter dinner side dishes or proudly taken it along to potlucks. Super flavorful and filling, the Ritz crackers add an unexpected crunch to the cheesiness and sweetness in this baked pineapple casserole.

You can serve a pineapple casserole dessert course or as a side dish. Its flavors make it super flexible and it goes well with so many different dishes or stands well on its own.
What Cheese Should I Use?
Sharp cheddar is a great option for this dish. The strong flavor contrasts the sweetness of the pineapple in such a yummy explosion of flavors.
Grated cheddar is the best choice to mix and melt well into the casserole.
Can I Add Sweet Potato?
Sure! Throwing in a sweet potato or two adds a nutritional punch and an extra, earthy sweetness. Just peel and boil your sweet potatoes ahead of time until soft. Let them cool and dice them. Stir them into your dish with the pineapple before topping and baking.
How to Store
Casseroles are amazing because they reheat so well! You can cover this dish with foil or a lid and store in in the fridge. Just reheat it to enjoy yummy leftovers for up to five days.

Healthy Substitutions for Some Ingredients
When I cook pineapple casserole for my home dinner (without the need to impress guests) I usually use healthier ingredients. Here are the changes to the recipe.
I reduce the amount of Ritz Crackers from 1 sleeve to 1/2 and add 1/2 cup instant oats.
I don’t use sugar.
I switch out butter for 1/3 cup coconut oil.
I use gluten free flour.
I use low-fat cheese instead of full fat.
I reduce the amount of Ritz Crackers from 1 sleeve to 1/2 and add 1/2 cup instant oats.
You might want to play around with your recipe, adjust the other ingredients but I found the substitution pretty easy to do. Kids can’t feel the difference 🙂
